No Knead

Utensils
3 Qt / 2.9 L
cast iron pot
Wooden
spatula
3 Cups of
flour
1 ¾ teaspoon
salt
¾ teaspoon
active dry yeast
1 ½ Cups + 2
Tablespoons (375 ml + 40 ml) of water (1
2/3 C of water in total (415ml))
Procedure:
In a bowl
mix all the dry ingredients. Add 1 ½
cups of water, mix with a spatula (or hand) until you have a moist dough, if
you need more water add each table spoon at a time. Cover with plastic film and
let stand between 12 and 18 hrs.
12-18 hrs
later…
Uncover
dough and sprinkle some flour to separate from the sides of the bowl. (Dump on
the table dusted with flour if desired.) Using
the folding method stretch and fold
the dough from the sides to the inside, flip leaving the seam on the
bottom forming a ball, cover and let rest for 2 more hours.
1:45 hrs
later…
Put the pot
inside the oven with the lid on and preheat oven to 450°F.
Once the
oven is ready, take the pot out and sprinkle it with some flour. Dump the dough
in the pot leaving the seam on the top, cover with lid and bake for 30 min.
Once 30
minutes are past, take the lid off and bake for 15 minutes more until golden
brown.
Remove from
pot immediately.
Let stand
for 30 min before cutting.

Remove immediately from pot
Let cool down for 30 min.
