No Knead Bread Recipe

Prep time 10 minutes
Rising time 12-18 hours
Baking time 45 min
Serves 1 loaf of bread

Utensils
3 Qt / 2.9 L cast iron pot
Wooden spatula






Ingredients:

3 Cups of flour
1 ¾ teaspoon salt
¾ teaspoon active dry yeast
1 ½ Cups + 2 Tablespoons (375 ml + 40 ml) of water  (1 2/3 C of water in total (415ml))

Procedure:

In a bowl mix all the dry ingredients.  Add 1 ½ cups of water, mix with a spatula (or hand) until you have a moist dough, if you need more water add each table spoon at a time. Cover with plastic film and let stand between 12 and 18 hrs.

12-18 hrs later…
Uncover dough and sprinkle some flour to separate from the sides of the bowl. (Dump on the table dusted with flour if desired.) Using  the folding method stretch and fold  the dough from the sides to the inside, flip leaving the seam on the bottom forming a ball, cover and let rest for 2 more hours.

1:45 hrs later…
Put the pot inside the oven with the lid on and preheat oven to 450°F.
Once the oven is ready, take the pot out and sprinkle it with some flour. Dump the dough in the pot leaving the seam on the top, cover with lid and bake for 30 min.

Once 30 minutes are past, take the lid off and bake for 15 minutes more until golden brown.

Remove from pot immediately.

Let stand for 30 min before cutting.



Dough
Dough 12 hrs later
Sprinkle dough with flour
And separate from bowl
 Dust table and work if desired
Or you can fold in same bowl
Folding inward
Form ball and seam on bottom
Let rest 2 more hours
Sprinkle preheated pot with flour
Dump dough in pot
Seam will be on the top


Close the lid and bake in oven 30 min.



Remove lid and bake for 15 min. more


Gold and crispy

Remove immediately from pot

Let cool down for 30 min.

Before slicing.
